HONEY GLAZED SWEET POTATO WITH POMEGRANATE

YIELD: Makes 2-3 servings

INGREDIENTS

2 medium-sweet potatoes

Cheddar cheese (5 slices)

Apple (1, medium size cut into thin slices)

1/3 cup-pomegranate seeds

Pure Honey (2-3 tablespoon)

DIRECTIONS

Remove the skin of the sweet potatoes and cut them into slices about 1-inch thick. Take a frying pan and add 1-2 teaspoons of olive oil and add a slice of sweet potato and fried until light brown. Remove from fry pan and let them cool.

Use a butter knife to spread equal parts of cheese on top of sweet potato slices. Top with equal parts apple slices, pomegranate seeds, and a drizzle of honey.
